The Hatsukokoro HAP40 Gyuto 210mm is a high-performance kitchen knife built for serious edge retention and long-term durability. We have long referred to HAP40 as Voodoo Steel because it holds a sharp edge noticeably longer than most steels while still being very manageable to sharpen. Heat treated to a high hardness, it delivers excellent cutting performance with a fine, precise edge and impressive wear resistance.
The blade features a clean kasumi finish with stainless cladding for easier maintenance, paired with a well-executed grind that balances thin cutting ability with durability. The one-piece octagonal ebony handle adds a refined look and solid feel in hand, making this an excellent choice for both home cooks and professionals seeking long-lasting performance.
Care Instructions: Hand wash and dry after use. Do not put in the dishwasher. Use a soft cutting board and avoid bones, frozen foods, and hard surfaces to prevent chipping. Although semi-stainless, dry promptly after use to maintain the edge and finish.
What Customers Are Saying: The one review so far praises the factory edge, sharp enough to shave arm hair out of the box, and reports it held up through a full day at a busy sushi station with nothing more than honing rod touch-ups needed. The reviewer summed it up as a knife that does not excel at any one specific task but handles everything well.

Great all around knifePosted By: Kevin Hirakawa

The factory edge was pretty good. It could shave the hair on my arm. It handled a busy sushi station all day with only my honing rod to refresh the edge. Sharpened it on a 4K stone and the edge was perfect. It does not excel at any one thing but does everything well.
