This sweet looking boning knife is a great addition to the line of Yaxell Dragon Fire kitchen knives that have become a favorite of many of our customers.
Yaxell is based in the heart of Japanese knife making, Seki City, where they produce a wide variety of kitchen knives using many different core steels. This is a new addition to their Dragon line, which is constructed from nitrogen-enriched American BD1N steel. It is hardened to a Rockwell Hardness of 63 and is a mono-steel, laser-cut construction. BD1N steel is known for its durability and ability to be sharpened to a razor edge while maintaining that edge long after other knives have gone dull.
This is a classic slim boning knife intended to portion, part, or bone cuts of meat. The shape and style is very similar to a Western boning or fillet knife and should be a familiar pattern for most cooks. The accentuated curvature of the blade also makes this knife particularly good at filleting smaller fish like trout, stripers, or red snapper, as well as boning work that may require a thinner, more dexterous blade.
The great looks of the blade are further enhanced with the addition of a very nice looking handle constructed from linen-canvas Micarta with three stainless steel rivets. The canvas material is dyed red and finished to a very high standard.
