TOJIRO is one of Japan most respected producers of accessible high-performance kitchen knives, and the CLASSIC line — formerly known as the Tojiro DP — continues the tradition that made the brand a household name among serious cooks. The knives are unchanged from the DP line. Only the name is new. If you have been researching the Tojiro DP 210mm petty, this is the same knife.

The CLASSIC Petty 210mm occupies a unique and useful space in the kitchen — longer than a standard petty but narrower than a gyuto, making it an ideal slicer for fish, proteins, and smaller ingredients where board space is limited. The VG-10 stainless steel core delivers excellent sharpness and edge retention, while the softer stainless cladding adds toughness and makes sharpening easy and approachable. The convex grind and tapered spine give the blade a light, responsive feel, and the slim 36mm height keeps it precise and agile through a wide range of cutting tasks. The black micarta handle is durable and comfortable through long prep sessions.

Care Instructions:
VG-10 stainless is low maintenance but a few good habits will keep this knife at its best. Hand wash and dry promptly after use and avoid the dishwasher. Do not use on bones, frozen foods, or hard crusts. Sharpen on quality water stones to maintain the fine edge and hone regularly between sharpenings.

I do love the traditional Japanese styles. But the Western-styled Tojiro DP line and similar knives still embody the Japanese approach: thinner, with harder steels that get sharper. I have Mercer and Messermeister chef's knives and they're fine, but thinner and sharper is just better. This is Japanese performance at a price to value sweet spot. Beyond this knife lies the land of diminishing returns. : )

Needed a all stainless steel clad non flexible knife and it is exactly what I needed. Only used for a couple weeks now but has held an edge really well. In my opinion chef knives togo is the only company to use for online knife buying. They have always went above and beyond .... until next time !

Tojiro knifes alway surprise me, great price but you get everything; a knife I would take to any professional level kitchen, top quality steel(though sharp ootb can be taken sharper and refined), solid finish and balanced and comfortable. Great knife to slice fish in tight spots or roasts etc; and great to prep all sorts of vegetables and root vegetables.. CKTG great service and fast shipping! As always.

Good f&f, decent sharpness ootb, good clearance on the board. I would prefer a slightly smaller handle. I enjoy the length more than a shorter petty, this is my favorite all around knife. Price is amazing. Awesome customer service. Thanks again!

Home cook. First Jknife. I have some nice German knives that were more expensive but never as sharp as this one. If this is a budget Jknife, CKTG will be getting more money from me soon. FF is ok, has one very small bolster/scale offset. Sharpness balances out FF. Absolutely recommend this for step up from production German.
