Once in a while we obtain a knife that transcends the basic requirements of a cutting implement with its extraordinary levels of construction and visual appeal. The Takayuki Kageuchi Honyaki Sakimaru is a knife that absolutely falls into this category. One look at its long slender blade and stunning handle is all that is needed to appreciate the extreme levels of skill and artistry that have gone into the making of this knife.
The blade is made from Shirogami 2 carbon steel that has been forged using the Mizu Honyaki method. Honyaki means “true forged” and in this case it is used to describe the heat treatment that allows for a very fast quench on the edge while the spine is allowed to cool much slower due to the encapsulation in clay. Thus the edge stays very hard while the spine is less stiff and offers some shock proofing to the blade as a whole. The blade is quenched in water, thus the mizu nomenclature.
While this is a classic yanagiba in terms of its general profile and proportions, it is slightly more unique as it has been made with a Sakimaru style tip reminiscent of a Japanese sword.
The stunning mirror polish reveals a wonderful hamon on the blade face which is enhanced with some great looking hand chiseled kanji elements. The final touch of class is the addition of the beautiful handle made from ebony with a Corian ferrule and end cap.
The Takayuki Kageuchi Honyaki Sakimaru 300mm is a fully functional piece of art that truly deserves the heirloom label.
