The Sukenari knife company operates out of their small blacksmith shop in the Toyama Prefecture where they have been making knives for over two generations. They have a reputation for their excellent abilities forging some of the finer steels and honyaki style blades.
The Hairline series of knives are made using the super steel known as Aogami Super. It is regarded as one of the kings of high carbon steels in the making of fine kitchen cutlery. AS is rich in carbon and other elements and can be hardened to a very high rating. It is known for taking a very fine edge while also possessing very high edge retention characteristics. Wear resistance is on the medium side but it is very easy to sharpen. It is a reactive steel but in the case of this knife that inconvenience has been minimized by the addition of a stainless steel cladding. The cladding is given a hairline finish which really means a brushed look.
The blade shape is classic gyuto. Length and height are well proportioned. There is a good long flat area from the heel to about 2/3 along the blade where it curves gently up to a very finely shaped tip. The blade is coupled to a traditional octagonal rosewood and black pakka wood handle. The complete package is well balanced and great to look at, and boasts superior fit and finish—the epitome of a knife bearing the Sukenari name.
