We love the look and we love the name. How can you not smile at a knife called Wavy Face! Thatís what blacksmith Mr. Tanaka calls the hammered cladding on these unique and attractive looking blades.
Katsuto Tanaka is the principal blacksmith responsible for hand-forging these lovely blades. He works in the town of Matsubara, which is located in the city of Omura, Nagasaki Prefecture. The region is well known for its blacksmithing companies and age-old techniques are still being used today in the production of knives and farm tools.
The edge on blue steel is one of the longest lasting of the Hitachi Paper Steels. It is probably the most highly regarded carbon steel in the kitchen knife arena. The core steel is clad with a soft stainless jigane, which is the recipient of a unique hammered finish that is created using a special anvil on the spring hammer that Tanaka-san designed.
The blade is attached to a very attractive sandalwood handle in octagonal shape with a colored pakkawood ferrule.

Needed a sturdy smaller knife with great performance and maintenance I didnít have to worry too much about for everyday use. This one is nice and tall, thin but not too thin for my purpose, nice and tall and cuts like a champion. It feels lighter than 5oz and very well balanced. I wasnít sure Iíd like the smoked yellow handle, but in person, with that great tsuchime, itís hilarious- kind of like a petunia in a bad mood. With a nasty sticker. Iíve been grabbing it everyday like I was hoping I would. I love it!
