Kohetsu is a CKTG exclusive brand made in Seki City, Japan by the Tsukahara family - specialist knifesmiths in a city organized around the craft, where each shop owns one stage of production and blades move between them in plastic crates on small delivery trucks. Mark visited and toured these shops personally. The VG5 line uses a refined stainless steel from the V Gold family - similar to VG10 but with higher vanadium and no cobalt, producing a tougher, less chip-prone edge at 60-61 HRC that sharpens easily and performs well in daily kitchen use.
