The Konosuke SKD Tsuchime is a new offering from Konosuke, one of the most popular brands at CKTG. Unlike their other lines, the SKD blades are made in Sanjo City, which shows in the general shape and geometry when compared to their more usual Sakai models.
The SKD Gyuto 210 is a stellar all-around chef type knife. It is made from SKD stainless steel, hardened to about 62 Rockwell. It is a san-mai construction with a core that is fully stainless wrapped in another stainless steel for protection and shock resistance. Daily maintenance is reduced considerably over carbon steel knives.
The blade is ground 50/50 and it is as good as a grind gets! It features a fairly thin spine with a beautiful distal taper, that reduces down to the most fabulous thin tip. It has a blade height of almost 47mm which allows for extra finger to board clearance. The profile is fairly average, with a gentle curve in the belly.
The knife features a stunning hammered face and light colored kurouchi finish. This is quite simply one of the most beautiful knives we sell. Fit and finish are world class. Pure Konosuke! The blade is quite stiff and it features some lovely hand chiseled kanji characters.
This particular blade is coupled to a custom handle made by one of our talented woodworkers. The balance is just forward of the pinch grip point.
