I bought this knife at the beginning of the Coronavirus Pandemic as I was doing so much more home cooking. This knife is incredibly sharp, highly durable and easy to sharpen. My current knife collection consists of Shun Kansos and the Kanehide PS60 Gyuto 210mm is considerably sharper while also retaining it's edge longer. Fit & finish equal to quality knife. Had CK2G finish sharpening on knife. Came screaming scary sharp for home cook. Sliced thru Apple after I cored apple, peach after getten halves off stone with beater knife. Cantaloupe & cauliflower sliced easily. Great knife.

If you're in the market for a superior stainless knife, this is it. A real class above vg10, takes an extremely keen edge, takes punishment on the board very well, and looks & feels fantastic while doing so. The blade finish and polish is beautiful, and I found the handle to be fitted well & good quality. A true laser, good for pinch grip and easy to care for. Kind of annoyed I didn't get the version with the full custom handle!
