Hatsukokoro builds the Kokugei line around Blue #1 - one of the finest high carbon steel knives made in Japan. A tungsten and chromium-enriched carbon alloy, it sits at the top of the Hitachi paper steel family, prized for edge retention and sharpness that stainless cannot match. Kokugei means black whale - a nod to the kurouchi forge finish. Hammer-forged san mai construction, soft iron cladding, wenge octagonal handle. Made in Tosa, Japan.
