Doberman Forge 52100 Gyuto 210mm. Gabe Mabry is the man behind Doberman Forge, a small blacksmith shop located in Albemarle, North Carolina. He named his shop after his amazing, late family pet, a courageous guard dog as well as a beloved family companion. Akin to the strengths of the Doberman breed, Gabe strives to pound the same qualities into his blades: elegance (design), intelligence (making process), attentiveness (attention to detail), loyalty (everlasting). A friend for life, a one-of-a-kind knife! In fact, all the attributes we look for in a handmade knife.
Gabe is a recent winner of the highly prestigious competition, Forged in Fire. This is no game show. Contestants have to do things that normal blacksmiths can only aspire to. Winning this contest is high praise indeed.
We invited Gabe to make us some gyutos to our specifications and those of our customers. This gyuto is the first fruit of that labor (there are three more arriving very soon). It is fashioned from 52100 steel using a mono steel construction. The steel is hardened to 62+ HRC. The blade is full flat ground to .004, or thinner before it is stone sharpened to a 15-degree angle.
We anticipate that these one-off knives will find homes very quickly. So to avoid disappointment get your Doberman now.

CKTG is at heart a small business so the service is personal. They are one of the rare companies that actually dispatch the order the same day as receiving it and provide tracking information. It is great to deal with an individual by name and itís evident that they take pride and love in what they do.
Had a problem with one of the products and they went out of their way to resolve. I would highly recommend dealing with this company. Itís nice to find a company who cares and they will get me as a return customer.
Mark is great at answering questions for knife nuts of all levels. His service is second to none. Really appreciate the time he puts into every email as well as the free forum he hosts.
Great experience working with Chef Knives to Go. Quick delivery, and they are great about returning emails. I'm actually waiting on my second knife from them. I'm sure there will be more to come.
Loved the instructional videos on the website.
