Daovua has recently imported some high-quality carbon steel from the USA called 52100, and this promises to improve the quality and performance of their knives. 52100 is a carbon alloy steel originally developed in 1905 for ball bearings and is used for blades of all kinds, including kitchen knives.
Carbon steel knives require a little extra care to keep them performing their best. Always hand wash and dry the blade immediately after use to prevent rust, and never put it in the dishwasher. A light coat of food-safe oil between uses helps protect the steel, and the natural patina that develops over time is normal and adds protection.
