The small cleaver - sometimes called a Chinese vegetable cleaver - is a different tool from the heavy bone-splitting cleavers most Western cooks picture when they hear the word. Despite the tall, rectangular blade, this is a precision instrument: thin behind the edge, ground for slicing and chopping rather than splitting, and well-suited for cooks who want the flat edge of a nakiri with the added height and mass that makes push-cutting through large quantities of produce fast and efficient. Daovua hand-forges this one from 52100 carbon alloy steel imported from the United States - a steel originally developed in 1905 for ball bearings and now widely respected for its fine carbide structure and ability to take and hold a keen edge.

At 10.2 oz and 90mm of blade height, this has enough mass to do real work without being unwieldy. The kurouchi (black as-forged) finish covers the blade surface and the hammered texture gives it visual character - though as one reviewer notes, the kurouchi coating is dark and uniform enough that the hammer marks are more subtle in person than in the photos. The octagonal handle varies in color and wood type from knife to knife, which is part of the handmade nature of these blades. Care Instructions: 52100 is a reactive carbon steel - wipe and dry the blade immediately after every use. The tall blade height means more surface area exposed to moisture, so thorough drying matters. Avoid leaving acidic foods on the blade. Apply a light coat of camellia oil after use and for any storage longer than a day or two. A patina will develop with use and provides natural protection - let it build. Hand wash only, sharpen on quality water stones, and hone regularly between sharpenings. Each knife is made by hand so all measurements are approximations.

I received this knife yesterday. I added the sharpening service. Wicked sharp. I took it to work today. I am a chef. I put it to the test. This knife passed with flying colors.

I picked the 52100 small cleaver up along with the 52100 240mm gyuto and I am very happy with it so far. CKTG was very fast to ship, I ordered this product on Dec 21 and got it by Dec 24 which way above and beyond what I was expecting due to this being such a busy time of year.

The cleaver is very thin and sharp out of the box, sharper than the gyuto was but even that was sharp enough to use. The handle is gorgeous. The hammered finish isn't as prominent as the picture shows but that's mainly due to the kurouchi finish being darker and uniform across the entire blade which isn't a down side to me at all, each blade varies I'm sure. Overall for $75 you really cant go wrong. I have always heard fantastic things CKTG and I regularly see them interact with the community on Reddit providing as much help as they can. I will happily make more purchased through them in the future.
