BD1N is a high-chromium, high-carbon stainless steel produced by Carpenter Technology in the United States, and it sits at the foundation of everything in the Artifex line. Hardened to HRC 61 on this paring knife, it delivers edge retention and sharpness well beyond what most knives at this price point are capable of which is exactly the point. CKTGs Artifex line exists to give professional cooks and serious home cooks access to genuinely capable steel without the cost or anxiety that comes with carrying expensive knives into demanding environments.
At 80mm the blade length hits the most useful range for in-hand paring work compact enough for precise control through peeling, trimming, and detail cuts, long enough to handle fruit, small vegetables, and the kind of repetitive hand tasks where the size and feel of the knife in the grip matters more than reach. The blade runs 1.8mm at the heel with a 20mm height and a 50/50 bevel at 15 degrees per side, producing a fine, precise edge that stays sharp through sustained daily use on a wide range of tasks. At 2.2 oz the knife barely registers in hand, which is the right feel for extended paring sessions. The full-tang G-10 handle provides a secure, moisture-resistant grip and includes a relieved spine and slight heel bevel small details that reflect the attention to fit and finish that distinguishes this line. It pairs naturally with the Artifex II gyuto for cooks building a two-knife kit that can handle anything a professional kitchen delivers.
What Customers Are Saying: Reviewers who own both the Artifex II gyuto and this paring knife consistently describe the two as a natural pair the same steel, the same construction philosophy, and the same strong value at different sizes. Edge retention is the most frequently praised attribute, with multiple owners noting the knife holds its factory edge through weeks of daily home use without needing attention. A bartender who bought several as gifts for colleagues describes every recipient loving them including one who nicked herself borrowing it, unaware of how sharp it actually was. One detailed reviewer specifically calls out 80mm as the ideal paring length for in-hand dexterity and praises the BD1N steel for being both easy to sharpen and hard enough to hold an edge a combination that is harder to find than it sounds at this price.
Care Instructions: BD1N stainless steel is low maintenance and highly corrosion resistant. Hand wash and dry after each use avoid the dishwasher. Sharpen on quality water stones when needed and maintain with a ceramic rod or strop between sessions. Avoid hard bones and frozen foods.

Bought a couple for my bartender friends. Couldn't stand to see them struggling with the work provided knives. Both love them and one of the other bartenders nicked herself when she borrowed it. We should have warned her this little knife is sharp.

You can spend a lot more and get a lot less knife than this one. Dont waste your money on other small knives. You cant beat this one for overall quality and value. Razor sharp and takes a wonderful edge. Buy it while its available.

Very impressed with this little paring knife and its larger brother gyuto.. Came with a decent working edge, just needed a touchup. The handle was my primary concern buying it, that's tough to get right on paring knives for me, and while I might rough it up for some extra grip, the size/ shape is really nice. Thank you for offering these at the bargain price!!

Best Paring Knife for the PricePosted By: Mike

I've been using cheap Opinel paring knives that go dull in a minute for quite a while. So I thought I'd give this one a go to change things up. After a week of solid home use for various tasks dealing with fruit, meat, veggies, packages on various surfaces etc etc the knife is still as sharp as the day I got it. This little guy retains an edge very well compared to similarly priced knives. The only negative thing I can say about it is that it is a bit heavy for its size. Not heavy enough to drop a star though. Great bang for the buck.

Great knife. When arrived, came with a nice factory edge, and razor sharp. Easy to handle, light, with a great grip. During usage with fruits, vegetables, and meat, the knife performed well with no snags or issues. I recommend this knife to anyone who want a good quality small knife for longtime usage, at home or at work, as well as those who want to start building their personal set without breaking the bank

I think CKTG has nailed the "best bang for the buck" in this Artifex line of knives. Like the gyuto (which I also own) the fit and finish on this paring knive is great, with added details like a bit of relief on the spine and a slight bevel on the heel of the knife. Handy length and blade shape, very easy to sharpen and the edge seems to hold up quite well.

Great blade. The one thing I miss using a small petty is the dexterity and nimbleness of a paring knife, and 80mm is the perfect size for hand tasks. I cut a lot of strawberries and will commit to trimming green beans with a sharp paring knife
BD1N is very high in chromium and high carbon, so it should be easy to sharpen and hard enough to retain its edge. Well made with a very nice full tang design. Impressive.
