ZDP-189 Steel

ZDP-189 is a powdered metallurgy steel with one of the highest carbon and chromium contents available - capable of being hardened to 67 HRC and beyond. The result is extraordinary edge retention and wear resistance in a class of its own. ZDP-189 requires more skill to sharpen than most steels and is best suited to experienced cooks who know water stones.
