We are very fond of the bunka shape, finding it to be a very versatile knife for many operations on the cutting board. Michikuni Tokaji is a young blacksmith working with the Zakuri collective from the Tosa region of Japan. He makes knives for both the Karaku and Zakuri brands. This knife is a perfect example of his great skills. The blade is hammer forged using Aogami Super as the core with a soft iron cladding. AS is one of the most popular high carbon steel alloys among Japanese knife makers. It possesses very high edge retention and will take a fine edge on the stones. While wear resistance is about average, it is quite easy to sharpen.
While the knife is an average length for the style, it is slightly more stout at the spine than other bunka designs. But the lower grind is really well achieved and results in a knife that has a very thin behind-the-edge geometry. This blade will do well with most ingredients and especially harder ones that might cause a thinner knife to wedge. That increased thickness also results in a sturdy and secure feeling knife.
