This Yahiko Western Petty is made from the ever-popular stainless steel VG-10. The name stands for V Gold 10, or sometimes V-Kin-10 (kin means "gold" in Japanese). It is a cutlery grade stainless steel with a high carbon content containing 1% carbon, with added chromium, molybdenum, vanadium, cobalt, and manganese. These other metals give the VG-10 steel its most important properties, such as its ability to hold an edge coupled with great durability. It is one reason why the VG-10 label has been so popular with some of the biggest knife makers in Japan.
The knife featured here is stamped from a VG-10 stainless steel san-mai sandwich, which has been heat treated to 60 Rockwell. The core steel is clad with a softer stainless steel which is hammer-finished and polished to a high luster. There are also some nice hand-chiseled kanji elements to further enhance the great looks. The fit and finish of the blade is of a really high standard, especially taking into account the very reasonable price.
This is a small petty, almost a paring knife in size and feel. This is a perfect knife for peeling the skin from produce and for delicate and fine cutting work on garnishes. It would also be a great choice for fine filleting work and silver skin removal on small cuts of meat.
