A good pair of kitchen shears earns its place fast, and the TOJIRO FK-843 has become one of our favorites for exactly that reason. These are high quality, all stainless steel shears built with a one-piece construction, blades, tangs, and handles cast as a single unit for real durability rather than riveted-together parts that loosen over time.
The micro-serrated blades run 4 inches long with an overall length of 8 inches, and the 3 inch loop handles are sized and shaped equally, so they work just as well in a left hand as a right. Beyond cutting, the shears double as a bottle opener, jar opener, and carry two screwdriver tips, genuinely useful extras rather than gimmicks. An adjustable pivot joint separates at 95 degrees for thorough cleaning and sharpening, and the fully stainless build feels sturdy in hand while the layered blade construction holds an edge far longer than the typical pair of kitchen scissors.
What Customers Are Saying: Across 21 reviews, the consensus is overwhelming: these shears outperform their price by a wide margin. Cooks single them out for handling lobster and crab shell with ease, spatchcocking chicken in seconds, and standing up to daily restaurant use far better than the plastic-handled shears they replaced. One professional cook reports using them dozens of times a shift, calling them the most borrowed tool in the kitchen and praising the ability to disassemble fully for cleaning and honing, a feature absent on cheaper imported shears. The take-apart pivot and all-metal build come up constantly as the standout difference from drugstore kitchen scissors. The only mild critique on record is a wish for a slightly wider handle for larger hands, a minor preference rather than a real flaw.
Care Instructions: The fully stainless construction makes these shears low maintenance, but they should still be hand washed and dried immediately after use to avoid water spotting or rust at the pivot. Take advantage of the adjustable pivot joint to separate the blades fully for a deeper clean and for sharpening when the edge starts to dull. Avoid the dishwasher, since prolonged heat and moisture can affect the pivot mechanism over time.

I have found Tojiro products to be an excellent way to introduce friends and family to the joy of Japanese cutlery and kitchen tools. Reasonable price and stainless are two chief points for introductory gifting. These kitchen shears are great quality and I have purchased multiples to gift. Highly recommend.

I asked Mark for a recommendation for shears that can handle lobsters without effort; as always, his advice was spot-on! Sharp, comfortable and easy to clean - they've replaced two other cheap pairs and dismembered several crustaceans with ease!

Had been looking for some kitchen shears for a while, decided to give this one a try and so far I'm very happy with my purchase, sharpness out of the box was great and the fact they are all stainless steel makes for easy clean up and they come apart as well, I only wish the handle was a little wider but that's only personal preference , if you are looking for a great tool at a very reasonable price point this one will not disappoint!

I received these for a birthday gift after talking about wanting them for years. They're beyond my expectations! Beautiful craftsmanship, fine lines, and perfectly sharpened edges. My first task was dispatching some fresh soft-shell crabs and they were swift and nimble and didn't disappoint! Get these shears. $50?! They're worth well more than that.

extremely smooth cuts with these shears. Easy to clean and re-sharp thanks to the reversible locking mechanism. In the kitchen i only use knifes. I use these shears for paper, card board and leather up to 2 mm. Works superbly

Purchased to replace a set that I bought at WS about ten years ago that were similarly priced, but made in China and could not be taken down for cleaning, honing, or use as a quick utility blade. These shears are made in Japan, and enjoy the quality that follows from that pedigree. The pivot is adjustable, on top of being separable, so they will always cut all the way to the tip so long as they are properly cared for. Shears are a tool that should be in the knife roll of every pro, and the block of every home cook. No better tool for spatchcocking a chicken, opening containers, prying things, or cutting herbs. They are polished well which makes for an easy to keep clean surface, and sanitary use. I keep these in my back pocket along with a sharpie, a pen, and a digital thermometer every shift from prep to service, and I use them at least 25 times a day. By far the most borrowed tool in my kit, by everyone from bartenders and servers to the dishwasher. They seem expensive for a scissors, and they are, but remember that this tool, properly cared for will easily last a lifetime. Single best use discovered so far? Punching a hole in the top of fryer oil jugs to let air in as you pour, completely eliminating the glug, glugging, and associated splashing. It's the little things that make you smile in the middle of a hectic shift.

Great Shears! But, what is even more impressive is ChefKnivesToGo's customer service. It's refreshing to find a site/community dedicated to quality/built for life products. I have purchased two Konosuke's and a pair of shears from ChefKnivesToGo and they are my goto place for high-quality kitchen knives. It's refreshing to find a seller that sells quality products and stands the products they sell 100%. I will be back for my Takeda Gyuto - Thanks Mark & Susan!

Very high quality and sharp. Can tell they will last and be easy to sharpen when necessary. All metal, no plastic weak points to break. Extremely easy to take apart and clean- just open all the way and remove each half. Dry immediately after washing to avoid rust.
