This great looking and performing gyuto is made from Ginsan or Silver-3 steel. It is a very popular stainless steel that many people compare favorably to carbon steels in terms of feel, sharpening ability, and edge retention. The original intent for this steel was to be used in scissors and knives. It is very similar to 19C27, AEB-L, VG-1, and MBS26.

Blacksmith Suogo Yamatsuka clads this with a beautiful 63-layer damascus made from a softer stainless steel. It is some of the finest looking damascus we offer. There is a simple elegance to the blade and handle that makes this knife one of our favorites.

Of course the great looks play second fiddle to the functionality of the knife. And when a blade grinder of the stature of Hirotsugu Tosa is tasked with finishing and polishing, one can be assured of some of the very best grinds extant. It is a middle weight blade that is so well balanced that it almost cuts by itself while being very nimble in hand. The overall proportions place it firmly in the midsize spectrum. There is ample hand to board clearance thanks to a generous height of 51mm at the heel. The 233mm length will enable users to tackle almost any ingredient.

    Recieved a few days ago, listed for this based on the reviews for a long time. This blade delivers on every promise. Exceptional! A perfect medium weight. Grind is perfection. Only on a par with Takeda in craftmansship. Not to missed for beauty and more importantly for performance. 5 star. Worth my wait!

    This one became available awhile back, and after watching MrKnifeFanatic's review, I decided to pull the trigger. Being my first takayuki, I was pleasantly surprised. This is one elegant blade. Pictures do not do it justice. A solid middleweight, it still feels very wieldable in the hand. The grind has to be seen and felt to be appreciated. Cutting ability, food separation, effortless steering, all are just outstanding. Haven't worked on the edge yet, but a bit of refinement would make it even more of a cutter. The fit & finish are about as good as I have seen yet, beautiful!

    Perfectly ground knife like the review says. I love the weight and balance of this knife. It has a very substantial feel to it but is still thin behind the edge. It goes through everything well without much sticking. The handle is a little larger than standard, which I like. The only negative is that the choil was not rounded and a bit sharp, which I would not expect in a knife at this price point. Good OOTB edge - I'd give it about a 7. Well worth the price.

    Mr. Knife Fanatic-took your advice-spent $500.00 dollars and couldn't be more satisfied. Thanks for the your recommendation. The grind is perfection, the cladding is beautiful, the edge like a razor and the handle really feels great. I've had a Chef's knife in my hand every day for 30 years and this gyuto is THE BEST.     My first disclaimer is that I am a neophite to the entire Japanese knives offering but after years and years using really bad dull knives, I decided to scour the entire web and with some advice from Mark and intensive research, I came across this very special knife from Sakai Takayuki. I have to say that after several weeks of use, that I still love this knife and it does an amazing job cutting the entire gamut of meats and vegetables. One of the nice features of this hand forged knife is that with the damascus coating, that it does not rust as easily as a blue/white steel knife. This knife is really a piece of art as well. absolutely amazing. thanks Mark

    Just did the review video for this knife. I feel it is unfair of me to leave written reviews sometimes, but I will simply say this: If you are in the market for a custom knife and don't feel like waiting for it then you should strongly consider this knife. The grind is second to none.
