These shears are traditionally used for bonsai, but a growing number of pro and home cooks use them as kitchen shears. The material used is high-carbon steel, including vanadium. It is similar to Shirogami, though Shirogami does not include vanadium. The hardness is about HRC60.

Bought these as a present for my friend but was able to use them a little bit the other day. They are very sharp out of the box, the large handles are very comfortable to use and in my opinion are a very attractive tool to boot.
