1 people found this review helpfulBest quality Gyuto for the price! Iíve been cooking professionally for 20 years in chef owned restaurants and private country clubs. I use this knife exclusively at work for all my prep and line cooking needs. Itís lightweight, re-sharpens extremely well and holds a very good edge. This versatile Gyutu is an excellent introduction to Japanese knives and it out performs all the German knives that Iíve used for years. I donít mind the 75/25 edge and it sharpens great with just a honing steel. I also purchased the nice Saya that protects the knife and itís well worth the extra money! This knife is a great performer and an excellent value for high quality Japanese cutlery. I highly recommend this knife for any professional chef or at home cook. You wonít be disappointed!
