Here is a chance to get into the world of Japanese chef knives at an amazing price! The Richmond GT Artifex is a wa gyuto that is aggressively priced.

We have the blade made in Japan by Fujiwara especially for Richmond Artifex. It uses the same steel as the Fujiwara FKM line of knives called AUS-8. This is a stainless mono-steel blade which gives this knife a beautiful aesthetic simplicity and ensures your new knife will not discolor or rust. It is hardened to 58-59 HRC. Itís a light weight blade for the size with a fairly thin spine and a convex grind and a distal taper towards the thin tip. The knife has a good profile with a gentle belly to flat transition. The edge has a slightly asymmetrical grind of about 75/25.

The Artifex Wa-Gyuto comes with a really attractive ho wood octagonal handle with upgraded blond buffalo horn ferrule as you see pictured. This is a gyuto that has a really pleasant and nimble feel with a fit and finish that is unbeatable at this price.

    5  Good line knife, November 24, 2018
    Posted By: Andrew

Got it a couple days ago, am learning on a pro line (home cook working in a professional kitchen to learn) and I finally figured out what line cooks mean by "line knife". I spend hours doing prep and then hours on a narrow board (line) so a shorter knife is a must. The knife also sees use by others at times, so you don't want your treasures out there, just a good blade that can keep up in a pro environment. This knife seems to fit the bill - light, thin, holds a good edge with decent food release. After several cases of veg and 40+ chickens today (prep) along with getting everything ready for plating (line) the knife does not need anything on the edge (still push cuts newspaper) and it was light enough that my arms are ready to go another round. Thank you Mark for getting this excellent pro environment knife. My first day with it was really nice - a no worry knife that tears through tasks and makes me look better than I am

Best quality Gyuto for the price! Iíve been cooking professionally for 20 years in chef owned restaurants and private country clubs. I use this knife exclusively at work for all my prep and line cooking needs. Itís lightweight, re-sharpens extremely well and holds a very good edge. This versatile Gyutu is an excellent introduction to Japanese knives and it out performs all the German knives that Iíve used for years. I donít mind the 75/25 edge and it sharpens great with just a honing steel. I also purchased the nice Saya that protects the knife and itís well worth the extra money! This knife is a great performer and an excellent value for high quality Japanese cutlery. I highly recommend this knife for any professional chef or at home cook. You wonít be disappointed!

I'm a professional sushi chef and head chef in Manhattan. I own a large collection of another leading Japan made knife brand but this gyuto is my go to overall. It's light and nimble and sharpens well. An employee of mine had one and I've been jealous ever since.

I love this knife. Its tall, sharp, and thin. The wa handle is comfortable ,and light weight. If you're wondering about wa handle vs western handles go with the wa style. Wins out over mac, shun, masamoto etc. Get it.

Cuts through meats and tomatoes like a breeze, japanese style handle handle is a bit of a different experience to get used to but keeps the knife further from your fingers and a balanced stable grip. Excellent upgrade over the Victornianox Chefs knife and even the Tojiro Gyoto professional series.

Great f&f, great taper, wonderful tip, amazingly light, good handle, sharp ootb, price...outstanding! Perfect for getting a j knife with a wa handle and not having to spend too much. I would like to try more knife types like this and would love to see some similarly made and priced knives with some other steels. Super quick shipping. I don't buy anywhere else. Thanks guys!

Great knife for the price! Basically an FKM (which is highly praised) with a Wa handle, which I prefer! Sharpens easily and has a near perfect profile in my opinion for a 210. Very thin and a great cutter.
