This Kohetsu 1K6 Wa Bread Knife is made by Tsukahara in Seki City — one of Japan most storied knife-making regions — and it brings a distinctly Japanese aesthetic to a format that most Western kitchens take for granted. When we were offered these we did not hesitate.

The blade is laser cut from 1K6 stainless steel — a high-carbon stainless alloy hardened to 60 HRC that holds a sharp serrated edge well and requires minimal maintenance. The mono steel construction keeps the blade clean, lightweight, and easy to control. At 228mm with a 38.2mm blade height it is a nimble, precise bread knife that handles crusty loaves, delicate pastries, and soft sandwich bread with equal confidence. The serrations cut cleanly without tearing or compressing the crumb. I was looking for a short wa-handled bread knife and there weren't many choices. This knife was fairly priced, not too long and I am pleased to say, when I received it, met all my expectations. It's beautiful and feels well made and solid. It's also very, very sharp. I recommend it!

I've been looking for a wa-handled bread knife for years (one that wouldn't break my budget), and finally found one! Very happy with how light it is, perfect length, and great cutting performance. A+++

I've been looking for a WA handled bread knife for ages. It just didn't seem right to have an entire set of various Japanese knife types/steels all in Japanese handle style to have a bread knife with a western handle. This knife is so good! Has a great feel. Super sharp and glides through crusty loaves! First knife with 1K6 steel so it's fun to have something unique. The only way to best this would be a more elaborate pattern, such as Damascus, hammered or something, but I'm happy. Works great and feels great to use. The handle is really nice quality. I'm always trying to find bread to cut now!
