When Kamo-san was just 47 years old, he was awarded the "Dento-Kogei-shi" title, which stands for "master of traditional crafts" and is given only to a select few artisans who have made a significant contribution to their craft in a particular region. This finely crafted series of R2 alloy kitchen knives is a testament to his skills and dedication to his art.

Art is a suitable adjective to describe this great looking gyuto. The stunning damascus look is achieved by forging multiple layers of stainless steel over the core of R2 alloy. The knife is constructed in the san-mai style so one can see these layers when viewing the spine of the blade from above. The upper portion of the blade is etched to reveal the cladding and the lower portion is ground to achieve the fine edge and further reveal more of the hagane. It is a lovely look that together with the nicely chiseled kanji script results in a dramatic looking blade, high in aesthetic value.

240mm gyutos are the standard chef knives in many kitchens. They are all-around workhorses capable of processing almost any ingredients. The Kamo gyuto is a fairly light blade with a medium height and thickness. It has a sharp and precise feel to it. The profile is quite flat with a small amount of belly for those rocking cuts. Fit and finish are very good indeed with a nicely rounded choil and spine. Please note, the knife now comes with the rosewood octagonal handle with pakka wood ferrule. The handle in the video is the old version and we replaced it with the upgraded rosewood one that you see in the photos.

The stainless construction ensures that daily maintenance will be kept to a minimum while a high degree of edge sharpness is attainable with little effort. We think you will love this knife!

    It came very sharp out of the box, but I did run it through some nano cloth with some slurry spray, doing stropping technique, now it glides through the paper I tested it with like a hot knife going through butter, Really good knife!

    This is a really nice knife. Easy on the eye. Easy to maintain. And really easy to use. I first encountered this knife in a forum pass around and fell in love with the R2 steel. It takes a very good edge and seems to keep it forever. Maintenance is a breeze given the very caustic environment where we live. It has a great profile which rewards both chop and rocking styles. The tip is fine enough for detail work but will require some care in use. Fit and finish are first rate. All round, a great gyuto that will satisfy those looking for a middle weight knife that performs a bit laser like without the laser downsides. We are really liking this knife!

    Have had this knife for a few months now. My first 240 mm gyuto and I have found it fantastic. Comparisons are mainly with my Misono UX-10 and it wins on every front. It is a little chippy but I can cope with that; I have some other knives for the more robust tasks. Great value too.

    Bought this knife based on a recommendation from the forums and I have nothing but good things to say about it.

    -Comparatively cheap knife for R2 metallurgy
    -Nice workhorse of a knife. The blade feels sturdy and has a good weight. Balance point is where the pinch grip is.
    - It looks gorgeous with a gray matte damascus finish.
    - Takes and retains a steep edge very well
    - Very nice convex geometry and nonstick characteristics
    - Thin behind the edge
    - compared to my Richmond Artifex and MAC MTH-80, the wedging is greatly reduced

    Only thing is that I had to sand down the spine a bit to make it comfortable to hold. Also the out of the edge box was a 4/10 but took a great edge once I gave it some love on the stones. If you are looking for a super thin laser, this is not really the knife for you.
