Itsuo Doi makes some of the finest blades we carry. His attention to detail is evident in every aspect of these wonderful knives, from the grinds to the fit and finish. He has an ability to get the most out of the steel and the processes involved in the making of top shelf knives.
His illustrious father, Keijiro Doi, made a name for himself forging some of the best blades using a very tricky, low-temperature technique that no other knife maker of the day could master. Itsuo has followed in these giant footsteps with great abilities similar to his father. As they say, the fruit does not fall far from the tree.
The blade is fashioned from Blue #2 steel, which he hardens to about 62 HRC. The jigane is made from a soft iron which is applied in the san-mai style of awase. This leaves the Blue steel exposed at the spine and edge. Naturally this knife is reactive and will need to be maintained carefully to prevent rusting. This is especially true as the blade has been mirror polished to the highest sheen and that lovely finish will take some effort to keep up. Adding to this stunning presentation, the blade face is treated to some of the finest engraved kanji we have seen.
We are supplying the knife with a custom handle made by one of our favorite woodworkers. This one-off creation will make a great addition to the knife roll of any top chef or ardent collector.
