The Yahiko White #2 Nashiji Gyuto 210mm is made from the ever popular White #2 steel also known as Shirogami 2. It is quite similar to 1095 and White #1 steel but with extra carbon. This gives the blade a higher wear resistance than the other two alloys coupled with very good edge stability. It is a carbon steel and thus needs care with cleaning and drying between uses.
To aid with strength and in ease of sharpening, the core steel is encased in a softer stainless steel. This is achieved by hammer forging a layer of stainless steel to both sides of the hagane (inner core). The jigane (outer core) does not wrap over the top of the blade so both the spine and edge have exposed hagane steel. The outer layer is treated to a technique called nashiji, which translates into pear skin, and does resemble the slightly mottled look of that fruit.
The gyuto featured here is a medium length knife that actually measures slightly longer than the advertised 210mm. It is compact yet long enough to handle most ingredients with ease. It finds favor with smaller handed users and those seeking a slightly shorter blade, for reasons of personal preference as well as space restrictions. Blade height is just under 46mm which is a great balance to the edge length. It has a very nice flat profile from the heel which then transforms to a gentle curved belly towards the tip. A double bevel and versatile profile make it a great choice for every kind of user. We have added a nice octagonal ho wood handle with buffalo horn ferrule to this blade.
