Tojiro Shirogami Kasumi Gyuto 210mm is a line we developed exclusively with Tojiro for CKTG customers. These blades are constructed by hammer forging and use white #2 Shirogami carbon steel, which easily takes a scary sharp edge and is known for its superior performance for the price. The Shirogami core (exposed at the edge) is clad with soft iron cladding and has a polished kasumi finish. Both are reactive when exposed to moisture and acidic foods.

The knife will change colors (hues of blues and greys are typical) which is a great characteristic to play with, though it is also prone to rust if it's left wet, so a quick wipe of a towel after washing is recommended. This steel is also quite hard, so care is needed to not chip edge. The blade is attached to a D Shaped, Ho wood handle with a durable, black resin ferrule. This gyuto is a great all-around multi-tasking blade for a great price.

    Were do I begin.....This knife is a beauty... I personally love the fit and feel as well as the out of the box sharpness.. I would highly recommend this product and will buy more down the road.. it's easy to see the love put into this product... Not only does the knife perform well , it sharpens great as well...I would highly recommend a quality stone for this as well to treat the blade with respect

    Really nice little knife. Came with a great edge out of the box, super thin and cut like a laser. Just a very slight curve to the blade that you really need to be looking for to notice.

    At this price it's a perfect 5/5 for me.

    I bought this for a family member to introduce them to the world of Japanese knives. Great profile; high enough for knuckle clearance for the rockers, large enough to handle most tasks of a home cook and not so big that it's intimidating. The care seems to be moderate (keep it dry) and I'm even hoping to use it periodically. Tojiro knives are durable as hell and the price is unbeatable.

    I bought this as my first Japanese knife and my first high carbon steel. This was a purchase on a whim, but I wanted to see that high carbon steel was worth it as well as a Japanese style knife (coming from usual knife block german knives). This was definitely worth the money. Only thing I regret is not getting the initial sharpening done by CKTG to get the full “power”. I bought the CKTG knife guard to go with it and the board/knife wax. Works perfectly to hold the knife and the handle felt like it needed the wax. The handle can use some work, but it is still comfortable out of the box. Definitely needs some wax between the handle and tang to close out the gap, but that is an easy fix with the board/knife wax. Completely recommend as a first knife if you’re willing to put in the “work” to keep it dry. Let it get wet slightly and let the patina build up slowly; I think it looks beautiful with the grey/blue/red patina. I have yet to sharpen this knife, but from most reviews, this gets very sharp (I haven’t needed it yet I’m my 3 week experience).
