Mr. Shigeki Tanaka hand forges each Tanaka knife in the same way they've been doing it in Japan for a thousand years. As such, they are each a work of art. This 240mm gyuto is made with super strong VG-10 stainless steel and has a lovely damascus cladding. This size and style of knife is probably our most popular on the site. It is large enough for big jobs, but tapered to a nice tip for more detail. Paired with a D-shaped ho wood handle and a buffalo horn ferrule, these are professional level knives, priced for the home cook!

    Terrific knife. Takes a wicked edge and sharpens easily, unlike some other knives made in this steel. Tougher than ginsan and holds a good edge.

    The profile has a bit of curve, making it good for rocking and pushing. Fine tip for delicate work, but it wonít damage easily. The lightest of any of Tanakaís knives, with a semi-laserish feel.

    The Damascus finish is quite nice. The stock d handle is plain. Fine but plain. Suitable for pros, though it might need a coat of tuna oil if it gets wet a lot. Home users may eventually want to go custom.

    Highly recommended. Iíve tried most stainless knives on CKTG and I am not sure any of them clearly surpass Tanakaís VG10.

    Gorgeous knife, even compared to the $500+ knives I have. Sharpest knife out of the box I've ever opened. The subtly of the Damascus gives it a true understated excellence making it more appealing than the Miyabi Birchwoods etc. I also own. I will be looking

    Im an outdoorsman and home cook that loves knives of all types. First time user of gyuto purchased on recommendation from this forum. After a couple weeks use I am still very pleased. Holds nice edge with little maintenance needed thus far. I especially appreciate highly accurate, precise, and controlled cuts compared to western knives I used prior. It is taking me some time to get cutting speed back up, but that is simply a matter of time to really feel comfortable with this new tool. If there is any complaint, a minor one is that the handle is quite unrefined and seemingly unfinished. Not being familiar with this type of wood, I am contemplating what to do. In summay very pleased with purchase and see this is already becoming my every day kitchen knife.

    Really excellent knife. I've had this for a few weeks and couldn't be more pleased with it. The heat treatment is superb. It feels really hard for a VG-10 steel, holds the edge very nicely and is very easy to sharpen. It's very lightweight and i guess it's a bit taller then most knifes of this lenght. The knife i got was 252 mm long. It doesn't go super high for you rock cutters but you can easily go over an onion. A little bit sticky on the blade that's the only negative i have to say.
