For many years this awarded craftsman made outdoor knives. They are held in the highest regard by aficionados worldwide. Fortunately for us, Mr. Saji decided to try his hand at kitchen knives and we are all better for it.
His art encompasses not only the aesthetic but also the functional. These are no display case queens. They are kitchen weapons of the highest order. That they look and feel like jewels is the icing on the cake.
The core steel is R-2, aka SG-2, a very high tech powdered metallurgical stainless steel that is very well suited for making knives. It possesses a high edge retention ability while being moderately wear resistant and easy to sharpen. The core of the blade is clad in a multi-layer damascus made from a soft stainless steel. The stunning blade is a full tang design. The stainless steel bolster is attached to a well-made black micarta handle featuring 2 stainless rivets. The blade face is decorated with some handsome hand-chiseled kanji.
The Saji R-2
Gyuto 240mm is beautifully formed with an exceptional convexed grind. The blade height is tall but not overly so. It has a nice flat spot on the edge about 2/3 long which transforms into a gentle curve to the fine tip. It is a knife that would find favor with users of all kinds.
