Konosuke MM Ginsan Gyuto 210mm is the perfect embodiment of the skills of both the blacksmiths and sharpener/polishers that are a huge part of the Sakai knife manufacturing scene. This knife making region of Japan is known for sharing resources across many different makers. Other blade making towns are more one-stop style operations in that the entire knife blade is made and finished in one location under the eye of the head blacksmith.
The original MM series started with a line of knives constructed from Blue #2 steel. These new additions continue the basic style and proportions of those knives but use Ginsan Steel as the core element. Ginsan, or G3, is highly regarded for its keen edge taking and considerable toughness. It is a semi stainless steel that is then clad is a softer stainless alloy to protect and strengthen the inner core. Ease of maintenance is thus a minor issue with these knives. The blade face is given a very fine hairline finish which is further adorned with some beautifully executed hand engraved Kanji elements.
These are Konosuke knives, so you can be assured of the highest levels of fit and finish. Blade geometry and grinds are equally impressive. This is a thin knife in terms of profile and blade thickness. Not a laser but certainly not a workhorse either! This excellent knife has an upgraded ebony handle with laurel wood ferrlule that. The handle and blade have a small machi (gap) that is nicknamed Tokyo Style.
