After putting the knife through its paces for 3 months of hard use I am happy to share my thoughts on this wonderful knife. Upon first arrival, the knife was very rough from the choil and along the spine and top width of the blade. After a good sanding the knife was very comfortable and smooth to handle. The performance of the steel is a wonder! Arrived in good working condition, but a slight touch up on the 1000 stone made it scary sharp after a few strops. From veggie work to thin slicing beef is amazing. Really easy to work with, I would recommend any professional chef to give it a try. Well worth every penny!

I was really excited for this knife especially with the back story of the maker. The video really got me going as well. I missed the original offering and was thrilled when it came back in stock. It's rustic but takes a really keen edge. I ran it through a quick clean up and it was frightening at 1k.

Very rustic finish but has character. Mine came sharp and is easy to keep sharp. The steel isn't very reactive compared to some other knives at this price.

This knife is quite rustic, which is what I like about it. It's rather comfortable to use, and I like how much if a curve the edge has. Out of box it was relatively sharp, but it sharpened up nice. All in all it was definitely worth the money.

This knife is rustic and lightweight and comes razor sharp. The out of the box edge while razor sharp was a course grind which I quickly refined with my Shapton water stones. The value for this unique knife is excellent and for the price is a 5* rating. Overall I rated this as a Good Purchase.

This knife is beautiful, but it will not hold an edge. I have to hone it for each use, and whatever I cut with it sticks like glue to the knife.

Try honing at a wider angle and that should increase the edge holding.
