The Nhat Family Nakiri is a handcrafted Japanese-style vegetable kitchen knife made in Vietnam using reclaimed high-carbon leaf spring steel. Designed specifically for vegetable preparation, this tall nakiri excels at chopping, push cutting, and processing large volumes of produce. It is a hardworking culinary tool built for food preparation — simple in appearance but highly effective in performance.

The blade is forged from repurposed car and truck leaf springs, a high-carbon steel commonly used by blacksmiths for durable cutting tools. The heat treatment produces a tough, capable edge that sharpens easily and performs well in daily kitchen use. The profile features slightly more belly than a traditional flat nakiri, allowing for both push cutting and light rocking. Fit and finish are intentionally rustic, with a kurouchi surface that reflects its handmade character. As with most high-carbon kitchen knives, avoid twisting during cuts or cutting bones or frozen foods to prevent chipping.

Care Instructions: This is a reactive high-carbon steel kitchen knife and will develop a natural patina with use. Hand wash only and dry thoroughly after use. Do not place in the dishwasher. Avoid cutting frozen foods, bones, or very hard materials. Store in a blade guard, block, or on a magnetic strip to protect the edge.

I love this knife - very pleased in general, however mine is noticeably lighter than my Co-worker who ordered his atomer

The CKTG sharpening service on this was incredible! It's razor sharp and I've been using it constantly..love it! The Nakiri looks great, rustic and kinda crude but the handle is really really nice, both in hand and to the eye.

I love this knife - very pleased in general, however mine is noticeably lighter than my Co-worker who ordered his a few months before mine- perhaps it is because it is from a different batch of leaf spring base material - I was a little disappointed but have gotten used to the feel and it is a very useful knife.

      Another top performer!

After putting the knife through its paces for 3 months of hard use I am happy to share my thoughts on this wonderful knife. Upon first arrival, the knife was very rough from the choil and along the spine and top width of the blade. After a good sanding the knife was very comfortable and smooth to handle. The performance of the steel is a wonder! Arrived in good working condition, but a slight touch up on the 1000 stone made it scary sharp after a few strops. From veggie work to thin slicing beef is amazing. Really easy to work with, I would recommend any professional chef to give it a try. Well worth every penny!

Handle is a bit rough, but the hammered feel on the blade, along with the deep blue hues, give this knife plenty of character. Performance exceeded my expectations as the edge was well finished by CKTG.

I was really excited for this knife especially with the back story of the maker. The video really got me going as well. I missed the original offering and was thrilled when it came back in stock. It's rustic but takes a really keen edge. I ran it through a quick clean up and it was frightening at 1k.

Very rustic finish but has character. Mine came sharp and is easy to keep sharp. The steel isn't very reactive compared to some other knives at this price.
    Measurements on mine are:
    Blade Length: 170mm
    Blade Height: 55-60mm
    Weight: 147g / 5 1/8 oz

This knife is quite rustic, which is what I like about it. It's rather comfortable to use, and I like how much if a curve the edge has. Out of box it was relatively sharp, but it sharpened up nice. All in all it was definitely worth the money.

This knife is rustic and lightweight and comes razor sharp. The out of the box edge while razor sharp was a course grind which I quickly refined with my Shapton water stones. The value for this unique knife is excellent and for the price is a 5* rating. Overall I rated this as a Good Purchase.

      Pretty, but...

This knife is beautiful, but it will not hold an edge. I have to hone it for each use, and whatever I cut with it sticks like glue to the knife.

Try honing at a wider angle and that should increase the edge holding.
