We are very pleased to be the sole US distributor for the new range of kitchen knives made by Yoshimi Kato, son of the renowned blade maker, Hiroshi Kato. He has recently started making these great looking damascus knives under the banner of his illustrious family name.
The Kato VG-10 Western Black Gyuto is a sleek chef knife in the spirit of French profile blades like the famed Sabatier. Its 212mm length is coupled to a blade height of 45mm resulting in a knife with the feel and sensibilities of classic western style chef knives. The beautiful black micarta handle and stainless bolster reinforce this impression with elegant style.
The blade is made with a core of VG-10 stainless steel which has a multi-layer damascus cladding of a softer stainless steel applied. The damascus is polished to a near mirror finish which is quite stunning to behold. It is a thin blade in all directions with a spine thickness of just 1.7mm. The overall profile is quite flat from the heel to about 2/3 along the edge where it gently curves to the fine tip. Chef knife. Slicer. All-around kitchen cutter. This knife can tackle it all with efficiency, ease of maintenance, and those oh-so-great looks.
