My third trip to Japan was to Sanjo City and I had the opportunity to visit with the Hosikawas, a father and son blacksmith team that produce our popular Gihei brand. They invited me into their house and served tea and sweet treats called Wa-gashi (Wa means “Japanese” and gashi is a kind of cake made from mainly sugar, starch syrup, rice, wheat and adzuki beans)
Japanese tea with such Wa-gashi is a formal way to show warmest welcome to a guest. It is one of the best "omotenashi" in Japanese manners. Zuika in Japanese breaks down into Zui in Kanji means “happy” or “a sign of happiness” and Ka means a flower.
