This Yahiko White #2 Gyuto 240mm is made from a single blacksmith in the Sanjo area. His main source of income is through the production of sickles and we're the first one to offer his kitchen knives outside of Japan. One of the reasons I go to Japan every spring is to meet new blacksmiths like this and introduce their knives to our customers. These nicely clad knives have a simple, sandblast finish which gives them a frosted appearance. The edge steel is hardened by the smith to about 61 Rockwell and he does this process in house and by experience. Cladding on the blades is iron. Please note you can sometimes see a little of the scale on the knife right at where the tang enters the handle.
