The 250mm Togatta was made exclusively for CKTG - a hybrid profile between gyuto and sujihiki that gives more reach and forward momentum than a standard 240mm gyuto while retaining the versatility of the gyuto format. Aaron calls this his second Moritaka - loves it as much as his first. The edge holds through heavy use and comes back at 15-20k on a natural stone. Edge retention is out of this world. Care Instructions: Aogami Super is a reactive carbon steel and the soft iron cladding is also reactive - both the edge and the cladding will patina naturally with use. The kurouchi (black as-forged) finish on the cladding provides initial protection and the patina that develops adds further protection over time. Wipe and dry the blade immediately after every use. Avoid leaving acidic foods on the blade. Hand wash only, never dishwasher. Apply camellia oil for long-term storage. Sharpen on quality water stones - Aogami Super at 64-65 HRC rewards careful technique and responds beautifully to stropping. Keep away from bones and frozen foods.

This knife is also called Moritaka KS profile or Gyuto and Sujihiki hybrid or CKTG / Moritaka collaboration.

I was a line cook during my college years in the 1980s. I became a Japanese kitchen knife geek in the 1990s. I turned foodie and home cook with the new Millennium.

J. R. R. Tolkien wrote of the “One Ring” in the “Lord of the Rings” trilogy that came out in theaters circa 2002.

Subsequently, Japanese kitchen knife geeks developed a line of thought whereby one ring attributes were transferred to a Gyuto with qualities so superior as to rule them all.

Other older popular culture monikers were also used in knife discussions: laser, “Goldfinger” book, Ian Fleming, 1959; phaser, “Star Trek” TV series, Gene Roddenberry, 1966; light saber, “Star Wars” movie, George Lucas, 1977.

One can understand a fire based on the “Fire Triangle” of fuel, oxygen source and ignition source. Similarly, one can understand a knife based on my “Knife Triangle” of steel type, heat treatment and blade geometry.

The subject knife, based on Knife Triangle evaluation, is the One Knife To Rule Them All! It cuts like a laser, has the power of a phaser and wields like a light saber!

I would not want to be without one!

My second Moritaka and I love it just as much as my other. This thing takes a beating and keep on coming back for seconds. Even with a 15-20k polish on a natural stone the edge will still last a good while. It sharpens with ease and the edge holding is out of this world. Only draw back if the handle for a right handed person but for the steel it's easily over looked. And the usual great service from Mark.
