The convex 50/50 grind that defines the Moritaka Supreme line is not accidental - it is a deliberate geometry that provides exceptional ingredient separation, pushes food off the blade during cutting, and creates a more durable edge geometry than a flat grind at the same thickness. Moritaka Hamono has been developing this formula in Yatsushiro, Kumamoto Prefecture for over 700 years. The kiritsuke at 210mm is the angular, flat-profiled alternative to the gyuto - better for push-cutting and pull-cutting, with the clipped tanto tip that handles detail work a rounded blade cannot. Care Instructions: Aogami Super is a reactive carbon steel and the soft iron cladding is also reactive - both the edge and the cladding will patina naturally with use. The kurouchi (black as-forged) finish on the cladding provides initial protection and the patina that develops adds further protection over time. Wipe and dry the blade immediately after every use. Avoid leaving acidic foods on the blade. Hand wash only, never dishwasher. Apply camellia oil for long-term storage. Sharpen on quality water stones - Aogami Super at 64-65 HRC rewards careful technique and responds beautifully to stropping. Keep away from bones and frozen foods.

I mainly use this at work making sushi and it is an incredible knife. The hard edge gives you a ridiculously sharp blade. It is also very light, which I quite like. Treat it well and it will treat you well.

I am very impressed with the Moritaka Kiritsuke 210mm that I just purchased. The fit and finish of the knife are excellent. I really appreciate that it is available in the smaller 210mm size. My kitchen is not huge and the smaller knife makes a big difference. The balance is perfect for me and, right out of the box, it has a Bess sharpness of a utility razor blade. That works for me!

Reactivity was a real pain at first, but is now a non issue. Really hard Aogami Super steel sharpens pretty well, and will take a ridiculously steep bevel like it's nothing. This knife has seen a lot of line use. Great for herbs, soft veg on the fly, garlic, slicing cooked proteins or charcuterie, and absolutely assassinates onions. The grind make it really easy to maintain the blade and keep it very thin. I appreciate not having to spend a ton of time on the stones. Very easy to thin an iron clad knife as well, easier to remove than stainless by a mile. You can get a lot of utility out of this blade because it is very flat. Great for a pro who is ok with reactive carbon and needs something compact, light and nimble. Do not let your coworkers use it, it will be returned to you rusty and chipped.

This blade will take an edge of exceptional sharpness and it keeps it so well. Good out of the box, but take some time with your stones and stropping and it is absolutely wicked, I am so impressed, this is my new favorite knife, hands down the best blade I have. So well balanced, it's nimble on the board, the tip is so useful, the profile, a push cutters idea of perfection. I cannot recommend this knife highly enough, it is superb.

I don't usually prefer 8 knives this short unless it's for slicing meats but it was too amazing to pass up. Just got this knife in the mail with a custom handle. The handle install was really nice and my knife is flatter than the one in the demo and I was very excited about that. Beautiful knife, reasonably sharp out of the box. My only wish is that I had a saya to fit it with

I've never used a kiritsuke before, but I love the shape! This is my go-to knife on service, and it's a right workhorse! It was super sharp OOTB, I ran it over a 800 grit stone after a week of near constant use [just a routine of mine rather than it needing it] and it's actually sharper than what I thought sharp was. It's a very good buy and would recommend it to anyone.

Great knife! Laser thin, but retains a solid feel. The Aogami Super Steel gets shave-ready sharp and holds that edge for a while. If you're looking for a kiritsuke, consider this beautiful, functional option. It's well worth it. .

I picked this knife up not knowing what to expect having had no experience with a Kiritsuke. I love it. It takes little to put a ridiculous edge on it. It holds the edge very well. Fit and finish are both very nice as I have come to expect. The tip on this knife is exceptionally thin and sharp. My favorite things to do with this knife so far are slicing steak and brunoise of just about anything. Great Knife!
