Konosuke is one of our most popular brands, certainly one that elicits the most praise and lust among our customers, be they professional chefs, home cooks, or knife collectors! The MM series is the latest addition to their canon. It is a line that we believe will be among the most popular too.

The blades are constructed from Aogami 2 which is made by Hitachi Metals. Also known as Blue #2, this steel is a very popular alloy used in the making of fine cutlery. Easy to sharpen and with a relatively long lasting edge, the fine-grained steel can take a beating and keep on ticking, even in the toughest of settings. The inner core is laminated san-mai style with a soft iron cladding which is decorated with a brushed “hairline” finish. Some fine kanji elements are hand engraved on the blade face to set off the refined look of this beautifully made blade.

The knife is quite thin and the profile is fairly flat with a slight belly just at about the 2/3 point along the edge. As with all Konosuke products, fit and finish are of the highest order. The choil and spine are polished to extremely fine levels and look and feel superb. A beautiful octagonal handle made from ebony completes the picture perfectly.

    This knife impressed me right off the bat. If you know the steel, like the profile, and love to chop, this knife will not disappoint. It is utterly transparent: everything it looks like it will do, it does excellently. The photos make it obvious that this knife has a lightly more unique shape and profile, and it is a full carbon blade. But it begs to chop and - despite a very thin edge - feels quite robust and tough on the board. The handle is also just terrific and an excellent match to the blade.
