Forged in Fukushima by master bladesmith Takahiro Nihei, this exceptional knife represents a rare collaboration between Konosuke and artisans outside the traditional Sakai region.

This gyuto features SLD semi-stainless steel—a refined version of SKD11, commonly used for tooling. With a high chromium content (12–13%), SLD offers outstanding toughness, edge retention, and corrosion resistance while remaining easy to sharpen. It’s engineered to withstand high hardness without sacrificing durability, making it ideal for rigorous professional or home kitchen use.

What sets this knife apart is its robust, balanced feel and outstanding cutting performance. SLD steel holds a keen edge for a long time and sharpens easily.

Care Note: While SLD is semi stainless, we recommend drying the knife thoroughly after use to prevent rust. Avoid hard stuff like bones and frozen foods. Butternut squash is a frequent item customers chip their knives on.
