- verified customerThis is a beautiful knife. I've only been using it for a few days, so these are first impressions. Every detail is perfect. It has some heft, which I like, and feels solid. But it is incredibly thin behind the edge. Its qualities strike me most with carrots and other dense produce. The flat spot is generous; it chops like a dream. The curve up to the moderately raised tip excels at guillotine and glide, and rocking herbs pose no problem. I do wish it were a full 240, and the blade -- or, rather, the cladding -- is extremely reactive.
