Little can be said about the Konosuke HD2 that has not already been stated many times. This
honesuki knife is a prime example of what makes the HD line one of the most recognized and revered in the Japanese kitchen knife world.
HD2 is a semi-stainless steel that Konosuke keeps very close to their chest regarding composition and other criteria. What we do know is that the steel is a wonderful combination of stainless virtues combined with aspects of high carbon knives. It is a mono steel construction so there is no cladding. HD sharpens up easily and that makes up for the medium edge retention characteristics.
The HD knife line defined the term “laser” when it was originally introduced and that definition still holds true many years later. The blade is thin and light but very strong and stiff. As with all Konosuke knives, fit and finish is world class. The handle is made with ebony by Khii Studios and is the perfect match for the fine blade. The nice satin finish on the blade face is enhanced with some nicely embossed kanji characters. The handle is attached with a machi gap that is sometimes called Tokyo Style.
Honesuki knives are dedicated boning knives and excel at breaking down poultry. It is simply one of the nicest knives of it's type that we sell. Highly recommended.
