2 people found this review helpfulI'm really happy with this knife overall and for the price would definitely recommend it:OOTB sharpness: 5/10 - Not bad, but certainly not greatSharpenability: 8/10 - Sharpens quickly and easily, very nice.Edge Retention: 10/10 - Honestly outstanding, a fresh well honed edge will easily last months in the home kitchen, which has been my experience over the past year.Cutting performance: 7/10 - Great performance overall, nicely thin behind the edge. Performs excellent on general prep tasks with minimal sticking; starchy potatoes can be a problem though! It probably isn't as nimble as other similar knives, but I'm not too fussed about that as it's likely a durability trade off. In addition I generally don't use it for hard vegetables - but this is common to most J-knives. F&F: 7/10 - Pretty good overall. The spine is nicely rounded and comfortable to use for extended home use. I actually don't have any problems with the handle, I think it looks great, is comfortable to hold when the knife isn't actively being used and sits well in a pinch grip when you are.Great first knife and I'm looking to try some more Kohetsu products!
