If you are looking to enter the world of carbon steel Japanese knives, we highly recommend the Kohetsu Blue #2 line of knives as a great place to start.

This 240mm gyuto is a great cutter at a fantastic price. The larger than normal handle is balanced by the finely ground blade. It’s an attractive knife full of character while being easy to maintain.

While carbon steels require some care in that they can discolor or even corrode, the addition of a stainless cladding reduces this to just the exposed edge. The extra care needed on this edge is offset by the much easier sharpening characteristics of the metal. Even a novice sharpener will feel comfortable bringing this edge up to its full potential.

The knife comes with a very good symmetrical grind making it great for left- and right-handed users.

You will be hard pressed to find a better value in a knife than this lovely 240mm Kohetsu gyuto.

    Bought this knife for my coworker he was looking for his first knife and I talked him into carbon. He has no prior experience with carbon steel and has no problem with the knife rusting and absolutely loves the knife. Anyone on the fence this is a fantastic first knife. He liked it so much I bought the 270 and have to agree it's a fantastic knife the fit and finish was much better then I was expecting. Overall very happy with the knife

    Out of the box sharpness was actually pretty good, but a quick stropping session took it to phenomenal levels. Edge retention is fantastic, and the handle feels good with a pinch grip - even with my small-ish hands. The thin blade makes this knife very versatile as well.

    I'm really happy with this knife overall and for the price would definitely recommend it:OOTB sharpness: 5/10 - Not bad, but certainly not greatSharpenability: 8/10 - Sharpens quickly and easily, very nice.Edge Retention: 10/10 - Honestly outstanding, a fresh well honed edge will easily last months in the home kitchen, which has been my experience over the past year.Cutting performance: 7/10 - Great performance overall, nicely thin behind the edge. Performs excellent on general prep tasks with minimal sticking; starchy potatoes can be a problem though! It probably isn't as nimble as other similar knives, but I'm not too fussed about that as it's likely a durability trade off. In addition I generally don't use it for hard vegetables - but this is common to most J-knives. F&F: 7/10 - Pretty good overall. The spine is nicely rounded and comfortable to use for extended home use. I actually don't have any problems with the handle, I think it looks great, is comfortable to hold when the knife isn't actively being used and sits well in a pinch grip when you are.Great first knife and I'm looking to try some more Kohetsu products!

    This knife was recommended to me as a no frills extremely functional knife. The blade is easy to sharpen to a razor edge and retains that edge very well. The carbon edge doesn't seem to be particularly reactive.I did a bit of sanding on the leading corners of the handle to make it more comfortable, but I was expecting that when I bought the knife and viewed it as a tradeoff for the great price. After that five minute modification the knife is extremely comfortable to use and flies through prep work.
