There is something inherently appealing about kiritsuke knives. They look very purposeful and reminiscent of a Japanese sword. In Japan, these special single-bevel knives are used for both vegetable and protein preparation. They are customarily used by master chefs only. However, the basic shape has recently been employed in the production of double-bevel gyuto/kiritsuke knives.
While the knife featured here is not a true kiritsuke, it does utilize the fundamental reverse tanto profile and flat cutting edge that defines the classic blade.
Randy Haas and his son, Randy Jr., working from their blacksmith shop in Michigan, specialize in making custom handmade knives using some of the most beautiful damascus steels available. The steel used in this gyuto is called HHH Explosion. Randy Haas is known worldwide for his amazing
damascus steels and this design cements that recognition.
The HHH K-tip gyuto is a knife for most styles of cutting and chopping, as it features a subtly rounded belly and extended tip. The tip is very fine and pointed so it serves as a great tool for the preparation of vegetable julienne strips and other delicate cutting tasks. But with the extended tip and thin profile it also doubles as a slicer of proteins. The tip does require extra care in use as it can be rather delicate.
Of course, the attributes of this blade include superb fit and finish, expertly executed grinds, and the balance and feel of a fine instrument. The handle is a full tang modified wa style using spalted stabilized curly maple (from Craig Stevens Studio). It has an amazing deep curl throughout which is a bit hard to capture in a picture! It also features copper pins and a single center mosaic in copper and brass combo.
