Harukaze VG1 Stainless Gyuto 240mm offers a good performing steel in terms of toughness and overall feel. Of course, this is a very easy steel to maintain in terms of corrosion and rust prevention since it's fully stainless.
You'll be surprised by the outstanding out-of-the-box edge on this very well-made gyuto. It has good balance and a light feel, as well as an almost laser-like flat grind that is thin behind the edge. The knife is a true laser with the spine measuring 2mm.
The overall fit and finish are of a high standard. It has a simple but very nicely executed rosewood handle with a maple ferrule in a comfortable oval shape.

This guy is light nimble and just plain ferocious on the board. Every task I've used it for it has excelled in. It puts my other gyutos to shame with it's it's amazing usability.i can't speak too much for edge retention as I have only been using it for a short time, but it holds up well during my morning prep shifts. A quick home in-between tasks and it flies through everything from onions to beets to tomatoes. It pumps out some very nice products with no fatigue. I'm excited to see how the VG1 sharpens up. Again super lightweight and nimble. Definitely recommend if you want a next level up from your beginners knives. Or just want something lightweight and thin without spending 300+.
