Debas are specialized tools for breaking down whole fish. This 180mm Tanaka Kurouchi deba offers premier cutlery steel, handmade character, and a competitive price to anyone interested in trying a deba for the first time or looking for a quality knife to customize. This knife retains the traditional single bevel design of the deba. Single bevel knives are ground on one side only and are sharpened using a different technique than Western styled double-bevel knives.

The knife uses an Aogami #2 carbon steel core hardened to 62-63 HRC, wrapped in a reactive carbon steel cladding. While the kurouchi finish does inhibit oxidation, the knife will patina with normal use and rust if neglected. The ho wood handle is d-shaped with a black plastic ferrule. These knives are handmade so dimensions may vary between individual examples.

    If you break down whole fish this knife is awesome. Blue steel is sharp, it stays sharp, and if you're not careful it will go through pin bones without you feeling it. It will make quick work of fish 2-20
