Shapton Professional 1500 For the Edge Pro. The Shapton Professional series has a large following and we were fortunate enough to persuade the factory in Japan to make these custom sized stones to fit the Edge Pro. We're the only ones they cut these stones for at the factory for better cuts and accuracy. We highly recommend these excellent stones compared to the stock edge pro stones. Try one and you'll see why they're universally loved by knife sharpeners around the world.

Excellent water stone; cuts quickly and elegantly. However, these stones are considerably thicker than the Edge Pro stones, which changes the cutting angle by about 1 degree (+/-), which you have to compensate for when using the Edge Pro.

From synthetics to custom cut J-Nats, I own a LOT of stones for the EP and put them all to good use. I've grown my sharpening collection as I find each steel, and each smith's treatment of said steel, responds differently to a given stone(s). That said, the Shapton Pro 1500 is, without a doubt, my go-to workhorse for just about every single knife. Unless I'm setting an edge bevel that is dramatically different from the final grind, or dealing with repair work, this is the stone I use as a starter. For the grit, it cuts incredibly well and will provide a finish that allows for a direct jump to a much higher grit finishing stone. Indeed, I've achieved some fantastic edges using this stone alone. Can't think of anything else available for the EP that can set an edge, transition and finish in one package.
