These shears are traditionally used for bonsai, but a growing number of pro and home cooks use them as kitchen shears. These are made by a third-generation blacksmith named Nagaike san, who was born in 1939 and is one of the few remaining in what used to be a hotbed of blacksmiths. These are made with reactive high-carbon steel with C0.85. Please wipe them dry after use to keep them from rusting.
