Masakage’s Mizu line of knives is handmade in Takefu Village by master blacksmith Katsushige Anryu. This 165mm nakiri is clad construction with an Aogami #2 carbon steel core wrapped in a reactive iron cladding. This knife does not have any stainless properties so a patina will form with normal use. The finish is a deep blue/black kurouchi finish resembling cold, deep water, (mizu is the Japanese word for water). Aogami #2 is a first rate cutlery steel capable of taking very keen edges easily and holding those edges very well. The core steel in this knife is hardened to 62-64 HRC. Fit and finish are very good in this knife as it is in all Masakage knives. The handle in this knife is oval in shape and constructed of cherry wood with a marbled resin ferrule.

    was looking for something with a bit more height than the average nakiri and this is definitely it! i believe all their nakiri's are around 2.25 inches at the heel. super thin blade for that height, great for scooping, never fans out vegetables when chopping. great all around knife. the only thing i'd change is i wish the handle was sanded down so it was a bit smaller and flush with the collar.

    This knive is my first introduction to japanese cutlery. I am so impressed with the weight and balance, not to mention how sharp and thin the blade is. It makes prepping fun. A big thanks to the staff at CKTG!

    Unfortunately my experience with the knife so far has been just so-so (it seems like 99% of all review on this knife and others are completely glowing!?). I probably should have paid more attention to the weight and spine thickness before ordering. This is a heavy knife. It does not feel light in the hand. If you like that, great, but that is not why I like Japanese knives. The balance point is REALLY far forward and I would not consider this knife well balanced. You can get used to it, but when I go back to any of my other knives after using this one, they too take some getting used to again. The cutting performance is good, but again the profile is not super thin so while it can make fast work of veggies, it doesn't do well attempting thin cuts. Blade developed an uneven patina extremely fast even though I was quick to wipe down after each use. I'd like to love this knife, it looks great, but isn't what I was hoping for in a few areas.

    Love this Masakage nikiri, demolishes vegetables in seconds, makes food prep work a breeze. All my other non-Japanese knives are now wrapped and packed in kitchen drawers. First thing I did, cut a slot out of the top of my olive wood cutting board to make a permanent home to display this nakiri (and make it easy to reach). And, so glad I got the finish sharpening service!

    Great knife for the price. Was sharp out of the box and has a nice heft and balance. Fit and finish are superb. I did take this knife to an 8000 stone to touch up the edge but it really wasn't necessary. The lacquer on the kurochi finish should help the knife keep the deep water look for a long while. I'm very happy with the purchase and CKTG were very helpful and supportive during my decision process.
