Masakage Koishi knives are reaching a legendary status around here. Their exceptional construction, grinds, and materials have resulted in a bit of a cult following among knife aficionados. And itís no wonder: these are cutting and slicing stars. They have some of the best grinds and edges we have encountered and justifiably occupy the top spot in the Masakage range of Japanese knives.

The Koishi line is constructed from Aogami Super High Carbon Steel. This is one of the kings of high carbon alloys and is revered for its toughness and ability to hold an extremely fine edge. The inner core of this knife is clad with a softer stainless layer using the san-mai method of wrapping a blade on both sides while leaving the spine and edge exposed. The name Koishi means pebbles in Japanese and it is this description that perfectly illustrates the look of the hammered kurouchi finish applied to the outer layer steel.

Bunkas are quite similar to santoku blades in that they have a very flat edge leading to a slightly curved belly and thin tip. The outstanding feature of the bunka is of course the reverse tanto-style tip that gives it that characteristic weapon like look.

The well finished octagonal handles are made from cherry wood with pakka wood ferrules.

    This is one sweet knife! Its perfect for the in-between prep duties.It handles well, and it really looks great! superb fit and finish. Im already looking at other Masakage Koishi's knives.
