We are always excited to see a new line of knives from our friends at Konosuke. They never disappoint in any respect be it design, materials, or fit and finish. And so it is with this stunning new knife that stands at the core of the Sanjo YS line.
The new YS gyuto is a semi stainless steel construction clad in a full stainless layer. Konosuke does not publicize the type of steel used but it is very similar to their ubiquitous HD2. It is a semi stainless steel so you will see some patina over time. In this case it should further enhance the stunning look of the blade. We love the way that the kurouchi tsuchime finish of the cladding fades into the perfectly executed satin lower blade road, which in turn reveals the polished hagane and beautiful shinogi.
As the knife is made in Sanjo, the length matches the advertised number more than Sakai knives. In fact it comes in at just over the 240mm spec. The blade height is well proportioned to the length and it should appeal to most users. The edge geometry is standard Konosuke fare. In other words, superb!
Rounding out this great package is an octagonal Khii Studio handle made from enju and maguro woods. This not only perfectly matches the blade in aesthetic terms, but it also results in a knife that has a balance and feel that is as good as it gets.Maker: Konosuke

I've been using this knife for the past 3 weeks in a professional sushi bar. This is the second konosuke Gyuto I bought. As for the HD, fit and finish on the YS is stunning. Out of the box edge was excellent. It is screaming sharp. My only concern is that with an HRC of 64 it is quite easy to chip... It chipped at 3 different spots the first day I used it (cuting some fried sushis). Nothing a good sharpening cant solve. It didn't chip since then. Also, great service as usual from cktg, fast shipping and nice packaging.
