Posted By: Raphael BourgetI've been using this knife for the past 3 weeks in a professional sushi bar. This is the second konosuke Gyuto I bought. As for the HD, fit and finish on the YS is stunning. Out of the box edge was excellent. It is screaming sharp. My only concern is that with an HRC of 64 it is quite easy to chip... It chipped at 3 different spots the first day I used it (cuting some fried sushis). Nothing a good sharpening cant solve. It didn't chip since then. Also, great service as usual from cktg, fast shipping and nice packaging.
