We have several very fine cutlery lines we recommend to people looking to get into Japanese knives. The FMK line from Kanefusa Fujiwara is one that ranks up with the best and receives our enthusiastic recommendations time after time.

The FKM brand may be budget in price but itís rich in features and quality. The collection features a great mono-steel construction made from a molybdenum and vanadium semi stainless steel. It also comes with a sharp edge that is long lasting and easy to sharpen.

240 mm gyutos are fairly large knives capable of making light work of larger products. However their relatively slim blade and nice pointed tip allow for precision cutting and prepping of even small garnishes. The edge is nicely flat to about the 2/3 point where it gently curves to the fine tip.

The blade has a thin grind which is reflected in the fairly light weight of the knife. This light weight is reinforced by the black pakka wood handle which falls nicely to hand and gives the knife a nice balance point just forward of the bolster.

The Fujiwara FKM Stainless Gyuto 240mm represents serious bang for the buck and a perfect entry point into the world of Japanese knives.

For Care: Please wash with a powdered cleanser (we recommend Bar Keeper's Friend) and towel dry after you clean it. If you let these drip dry they can spot and rust a bit.

    I am a big barbecue fan and have used German knives for many years. After learning more about Japanese knives I decided to test one and this was a great entry point. Super sharp, good handle and large size.
    I use it to cut grilled steaks and use my German ones for crude beef.

    Picked this up a month or two ago and have been using it at work regularly since. It's getting due for a sharpening but is still likely one of the sharpest knives in the kitchen. It's well balanced, I use it mainly for push cutting and rock chopping parsley. I still use an 8" knife when I'm on the line but that's only because of limited space. While I do hope to try a Wa handle in future the western handle is quite comfortable whether I'm using a pinch grip or not which is quite nice as my hands are rather on the large side. The only thing that could improve this would be rounding the spine, really even just breaking the edge for the first few inches ahead of the handle would be about perfect. I bought this to try a longer knife and it's great when space allows, not once have I regretted this purchase. At this price it's one hell of a deal.

    Great knife for professionals. Sharp, OOTB, it's been in use 77 hours/wk for a month, and it's easy to maintain, great edge retention.
    I bought this for two cooks with alternating schedules, because it's a much better performer than our house supplied beaters.
    The quality of our product is much better with this tool, and at this price, I won't be upset when an accident happens.
    It seems durable. I dropped it on tile from cutting board height, with no chips.
    Great knife if you require accurate cuts, and low maintenance.

    An amazingly balanced, quality and sharp knife for the low price. It would make an amazing starter to piece for a home cook or culinary student alike thats need to build their kit. Its definitely good to start with something of this somewhat low maintenance knife. Maintain he edge and hit it with a stone once a month and shell make you smile.

    I love this knife and not just at it's price point. I knew I had found a gem in the bargain bin as soon as I held it in my hand, perfect!! I had poured over pics and vids studying it's profile and was correct would be great for my cutting style (rocker/slicer/ back-slicer), with a flat enough heel area for what little chopping I do and just enough belly for my rocking without sacrificing a nice pointed tip for back-slicing. The AUS 8 steel sharpened beautifully to a nice 4k edge and I've kept the 10* 70/30 bias at least for now and I like sharpening so edge retention isn't everything for me though it has held up great so far. Fit & finish on my example is great, the only things I would change if making it my own would be engraved Kanji (just kool) and maybe another (again with the cool factor) steel. I've read a lot about the FKM being a great intro knife, which it is but it's also a great knife period. If you like a western style gyuto there are certainly different and much more exotic offerings but don't confuse that with being better!

    Don't let the price fool you, this knife is impressive. After over two years of use it's become increasingly difficult for me to deny the fact that your hard earned coin goes a long, long way with this one. Straight out of the box she outperforms just about any knife in the price bracket and after a full progression she competes with many above. This is a steal of a tough as nails, yo handled laser with a quality distal taper and an extremely compliant edge profile.My only complaint revolves around edge retention, but she will outlast her German counterparts and so long you know your way around the stones the point is moot.For what it's worth, I'd put a freshly sharpened FKM in an onion battle with just about any knife, and while she may not have the style that some possess, she gets the job done damn near as well without burning holes in your pockets.What a damn fine introduction to Japanese cutlery, and astoundingly tough for as thin as she is. Highly recommend.

    This is my first Japanese knife. After reading through countless reviews I chose this one and I love it so far. It came very sharp OOTB with what I believe is a 70/30 bevel. It's balanced perfectly right by the bolster. Great price for a great knife!

    Fujiwara 240mm GyutoNice handle, comfortable grip, big enough for a large hand. The fit and finish is good, though not as refined as the high end Shun's. Sharpness out of box is ok, didn't test it on any food, but I will guess it's about 15 degree per side. Not scary sharp, but should be very workable. Personally, the handle is a hair bigger than I hoped, and 240mm is actually a bit too long for me. I am more inclined to a 210mm as I think I want a more nimble knife to work with. For dispatching large amount of food though, the 240mm will work well. Eventually I returned the knife. The customer service is very good. I have no complaints. Mark Richmond is helpful.

    First off I want to thank! Mark for the prompt service. The knife is very light for a 240mm gyuto and has a nice profile now what surprised me most is that it was sharp but not scary sharp out the box like my global G-16 but I'm sure that once is sharpened on some water stones it will be a laser, I believe before spending some serious cash on something more high end newbies should start with this great Japanese starter knife not to say a pro wouldn't use this but for learning sharpening techniques this is the way to go...

    Excellent value for the $. Great intro to Japanese chefs knives. Light weight, well balanced, very nimble, comfortable handle, sharpens easily (even without proper whetstones), will take a great edge, 70/30 bevel makes it seem even sharper.Fit and finish is very good but not perfect. A definite improvement in overall feel, sharpness, and ability to keep that sharpness compared to my previous western knives.If you have decent knife skills this knife will allow you to be much faster than the heavy western chefs knives you may be used to. Overall very happy with the purchase as I was looking for a true value introduction to Japanese knives, and can only imagine what the knives twice this price are like.
