- verified customerI love this knife and not just at it's price point. I knew I had found a gem in the bargain bin as soon as I held it in my hand, perfect!! I had poured over pics and vids studying it's profile and was correct would be great for my cutting style (rocker/slicer/ back-slicer), with a flat enough heel area for what little chopping I do and just enough belly for my rocking without sacrificing a nice pointed tip for back-slicing. The AUS 8 steel sharpened beautifully to a nice 4k edge and I've kept the 10* 70/30 bias at least for now and I like sharpening so edge retention isn't everything for me though it has held up great so far. Fit & finish on my example is great, the only things I would change if making it my own would be engraved Kanji (just kool) and maybe another (again with the cool factor) steel. I've read a lot about the FKM being a great intro knife, which it is but it's also a great knife period. If you like a western style gyuto there are certainly different and much more exotic offerings but don't confuse that with being better!
