We have several very fine cutlery lines we recommend to people looking to get into Japanese knives. The FMK line from Kanefusa Fujiwara is one that ranks up with the best and receives our enthusiastic recommendations time after time.
The FKM brand may be budget in price but itís rich in features and quality. The collection features a great mono-steel construction made from a molybdenum and vanadium semi stainless steel. It also comes with a sharp edge that is long lasting and easy to sharpen.
240 mm gyutos are fairly large knives capable of making light work of larger products. However their relatively slim blade and nice pointed tip allow for precision cutting and prepping of even small garnishes. The edge is nicely flat to about the 2/3 point where it gently curves to the fine tip.
The blade has a thin grind which is reflected in the fairly light weight of the knife. This light weight is reinforced by the black pakka wood handle which falls nicely to hand and gives the knife a nice balance point just forward of the bolster.
The Fujiwara FKM Stainless Gyuto
240mm represents serious bang for the buck and a perfect entry point into the world of Japanese knives.
For Care: Please wash with a powdered cleanser (we recommend Bar Keeper's Friend and towel dry after you clean it. If you let these drip dry they can spot and rust a bit.
