This long, slender slicer is a new addition to the fine line of kitchen knives made by blacksmith Michikuni Tokaji. This talented blacksmith hand forges these blades in his shop located in Tosa, Kochi Prefecture. He is one of a collective of blacksmiths that make the Zakuri branded knives.

AS is like Blue Paper #1 but with more tungsten, chromium, and carbon added. It is a popular steel that holds its edge well yet is still relatively easy to sharpen. The inner AS core is clad with a soft iron laminate that has the carbon forging scale left on. This kurouchi finish adds a fine aesthetic look to the blade while adding another level of protection to the reactive iron.

Long petty knives are a unique category of knives. They are essentially short sujihikis. These long petties are gaining in popularity for their abilities in the kitchen. Some cooks are actually finding them to be a better fit than a gyuto for many tasks. This petty is excellent for working with peppers, slicing protein, cleaning whole loins for steak, roast, and chop fabrication, for filleting, sushi, and decorative garnishing.

The blade is mated to a nicely made oval handle fashioned from rosewood and black pakka wood. Over all this is a wonderful knife fit for many uses and tasks. It is well made, great looking, and comes in at a very attractive price.
