Zakuri AS kitchen knives are a fairly new item for us, and a great addition to the Zakuri line. They are hand made by blacksmith Michikuni Tokaji in Tosa, Japan. Like all of the Zakuris, these blades are made by hand so the specs can vary a bit. Tokaji-san uses the very highly regarded AS steel as the core element of these blades.

AS, or Aogami Super, is one of the most popular high carbon steel alloys among Japanese knife makers. It is known for the very high edge retention and fine edge it is capable of achieving. Wear resistance is about average and it is quite easy to sharpen. It is a very reactive steel so wiping down and drying should be done after every use. The inner AS core is clad with a soft iron laminate that has the carbon forging scale left on. This kurouchi finish adds a fine aesthetic look to the blade while adding another level of protection to the reactive iron.

This is an average length santoku coming in at 170mm and is typical of the breed with its blade height of 45mm. The santoku is a very popular style knife, replacing gyuto or chef knives in many kitchens. It is adept at cutting, chopping, and slicing all kinds of ingredients. In fact, it gets its name from the Japanese translation of Three Virtues.

    Let me start by saying I have hated every santoku I ever owned, up to this point.
    Wanted to see how one performed with decent steel and also wanted to see a Zakuri in AS.
    The F&F on this knife is actually great. Nice kurochi finish with beautiful blue color. The rosewood handle with black pakka wood ferrule is well done. Balance point is right at my pinch grip. Was sharp, but not extremely sharp OTB. Sharpened on 3k, 5k, 1micron balsa to a screaming edge.
    Cuts like a dream and seem to hold an edge quite well.

    For people like me that prefer an entirely reactive blade with a kurouchi finish at a reasonable price, I think that this is a winner. Not sure about pro kitchen use as I have never been a pro. That said I cook at home every night, and this knife is a pleasure to use.
